For families, or those not fasting, this dish pairs well with wholegrain rice, potatoes or wholewheat pasta.

Ingredients

  • 125g chicken breast
  • 10g butter
  • 100ml chicken stock
  • 50g mushrooms, sliced
  • ¼ zucchini, sliced
  • 50ml pure cream / single cream
  • ¼ lemon, zest and juice
  • fresh parsley

Instructions

  1. Cook the chicken in the butter in a heavy-based fry pan until cooked through. 
  2. Remove from the pan and set aside. Add the stock to the pan to deglaze it - bring to a simmer and add the mushrooms and zucchini - cook for 5 minutes or so until cooked through and tender. 
  3. Turn the heat to low, add the cream, lemon zest and parsley - stir through before adding the chicken back in to reheat briefly.
  4. Serve with a squeeze of lemon.
