Healthy chocolate – Pomegranate Pennies

These healthy chocolate pomegranate pennies are heavenly – and oh-so-simple to prepare. Pomegranates are a really healthy fruit, boasting an impressive amount of antioxidants and vital nutrients like vitamin C, K, folate, potassium and fibre. 

These tart little healthy chocolate treats are the perfect gift for a chocolate lover in your life.

Ingredients:

  • 100g dark chocolate
  • 1/2 pomegranate, seeds

Method:

  1. Line a muffin tin with muffin cases or baking paper. Melt chocolate and drop a generous tablespoon of chocolate into each muffin case – it should make about 6 pennies.
  2. Before the chocolate hardens, drop a tablespoon of pomegranate seeds into each penny. Drizzle melted chocolate from a height to ‘cage’ in the pomegranate seeds.
  3. Refrigerate for 2-3 hours, until set.

Tips:

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
