These delicious Halloumi Vegetable Fritters serve up 25g of your 60g daily protein target, as well as plenty of healthy fats to keep you satiated and energised all afternoon. They’re packed full of nutrient-dense ingredients that are flavoursome staples to keep in your cupboard if you’re on a health-conscious diet like a ketogenic diet.

One of the key ingredients in these fritters is, of course, halloumi cheese. It’s packed full of flavour and nutrients and has a uniquely meaty texture making them ideal for creating these fried patties. Halloumi is a great source of vegetarian protein, aiding in muscle growth, repair and overall body function. Not only that, but it’s also a good source of calcium which is crucial for strong bones and nerve function, as well as vitamin A, which keeps your vision and skin healthy, and zinc which bolsters your immune system. All in all, this chewy cheese is a great option if you’re following a meat-free diet.

The sweet potato and courgette (zucchini) in these fritters also bring their own sets of health benefits with them. Ingredients

  • 95g courgette, coarsely grated
  • 75g sweet potato, peeled, coarsely grated
  • 75g halloumi, coarsely grated
  • 1 large free range egg, lightly whisked
  • ½ tbsp olive oil

Instructions

  1. Combine all ingredients except the olive oil in a mixing bowl and season with salt and pepper.
  2. Heat the oil in a non-stick frying pan on medium heat and, once hot, dollop tablespoons of batter around the pan. Leave enough room for the fritters to spread.
  3. Cook for about 3-4 minutes or until browning and mostly cooked, then gently flip and brown the other side.  NOTE: the courgette will release liquid and possibly make the mix more runny; give the mix a stir before putting a new batch in the pan, they should still cook well.
  4. Serve with your favourite side salad and enjoy!
