Grilled Chorizo Omelette

Omelettes are a delicious and easy way to prepare eggs, ideal for kick-starting your day with a high-protein breakfast or brunch. This tasty Chorizo Omelette recipe serves up almost half of your daily recommended protein, and can be enjoyed on both fasting and non-fasting days.

Eggs are a favourite of ours at The Fast 800. They’re ultra versatile, easy to prepare, and packed full of nutrients. Eggs are a high-quality source of ‘complete’ protein, with one egg containing around 6-7g of protein.1 A ‘complete’ protein provides all of the nine essential amino acids your body needs but cannot produce on its own, supporting muscle maintenance and aiding weight loss, among other benefits.

While many people think an egg-white omelette is ‘healthier’ as it can be lower in fat, this Chorizo Omelette recipe makes use of the whites and the yolk. Egg yolks are a nutritional powerhouse, housing more than 90% of the eggs minerals like selenium, iron and zinc which are known to support immune and bone health.2 This is in addition to their other beneficial nutrients like lutein and zeaxanthin which support eye health, and choline which supports cognitive function.3

Adding to the high protein content of this Chorizo Omelette is, of course, the chorizo. This flavoursome meat is also a complete protein, and is an excellent source of vitamin B-12, iron and zinc. That said, it’s important to eat chorizo in moderation as it also typically contains higher levels of saturated fat and sodium.

Ingredients

  • 50g chorizo, cubed
  • 75g cherry tomatoes, halved
  • ¼ red onion, sliced
  • 1 tsp olive oil
  • 2 eggs
  • 30g rocket

Instructions

  1. Preheat the grill to medium-high. Place the chorizo, cherry tomatoes, and onion on a tray. Grill for 5-10 minutes or until browned and cooked to your liking. Toss halfway through to coat the tomatoes and onion with the oil released from the chorizo.
  2. Meanwhile, heat the oil in a frypan on medium heat. Beat the eggs with some salt and pepper and add to the pan, ensuring that it covers the entire pan base. Leave for 1 minute, use a spatula to gently lift the egg away from the edges and allow the uncooked egg to flow to edge of the pan - you may need to tilt your pan to encourage this.
  3. When top surface of the mixture is getting small bubbles around the outside and looking cooked, spoon the chorizo mix onto one half of the omelette.
  4. Fold the empty side of the omelette over. Cook omelette for another minute. Flip or slide onto plate and serve immediately, topped with rockette. Add your favourite fresh herbs or some chopped fresh chilli.

Notes

  • Non-fasting day? Serve topped with some sliced avocado or your choice of cheese.
  • Choose chorizo that is nitrite- and nitrate-free. If you are following a gluten-free diet, check the product label to ensure it is also gluten-free.
