Stuffing Balls: The Fast 800 Way

Prepackaged stuffing is often ultra-processed, and high in carbohydrates, sugar and ingredients like corn syrup and hydrogenated soy oil. Making your own is often a great solution so you know exactly what’s going into them. However, even many at-home recipes are high in carbs, salt and sugar, which is why our nutritionist has created this healthier version for our members, which we’re now sharing with you.

As an alternative to using breadcrumbs to create the desirable texture in a stuffing ball, we’ve used ground almonds/almond meal. Ground almonds/almond meal is a higher fibre, higher protein alternative to flour, which is why we frequently use it in our recipes on The Fast 800 Programme. It has a lower glycemic index, helping prevent blood sugar spikes after eating, and offers many other nutrients like vitamin E and magnesium which supports the metabolism.

Comforting festive flavours like sage, rosemary, garlic and red onion are lifted by the lemon zest and sundried tomatoes, putting a Mediterranean-inspired twist on the classic that suits our focus on a Mediterranean-style diet. Ingredients

  • 15g butter
  • ½ red onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp fresh sage, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • 20g sundried tomatoes
  • 1 large egg, beaten
  • 15g walnuts, chopped
  • 1 tsp lemon, zest
  • 100g almond meal
  • ¼ tsp sea salt
  • black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to fan forced 170°C/190°C/375°F/Gas mark 5, and line a baking dish or tray.
  2. Heat a small pan on medium heat and melt the butter before adding the onion, garlic and herbs. Cook until the onion is tender, then transfer to a mixing bowl and let cool.
  3. Once cooled, add the remaining ingredients except for the olive oil. Mix well, then divide into 12 even portions and roll them into balls.
  4. Pop the balls in your baking dish and drizzle with the olive oil. Bake for 15-20 minutes until golden brown. Rotate the tray in the oven halfway through for an even cook.
  5. Serve with your favourite roast and gravy, and enjoy!

Notes

  • Tip: If you prefer - you can use this as regular stuffing to stuff your chicken or turkey instead.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat and serve.
  • Batch cook and freeze in portions for up to 2 months. Defrost and reheat before serving.
