This Easter mug cake recipe is all of the delicious flavours of the festive classic, but ready in just one swift minute and remarkably lower in carbohydrates and sugar!

As well as the coconut oil, the base of this Easter mug cake is ground almonds (or almond meal) which are a low carb, gluten-free alternative to regular flour in baking. Ingredients

  • 1 tbsp coconut oil
  • 1 large egg
  • 25g ground almonds 0.45 oz
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 orange, zest only
  • 30g currants 0.5 oz
  • 20g butter 0.35 oz

Instructions

  1. If solid, melt the coconut oil in a large mug in the microwave for a few seconds.
  2. Add egg, ground almonds, baking powder, spices and orange zest to the mug and mix well with a fork. Gently fold through the currants.
  3. Microwave on high for 60 seconds (this may differ depending on your microwave wattage). The cake should have risen and be shrinking away from the edges of the mug (if not, microwave for another 10-15 seconds).
  4. Turn the cake out and cut in half - spread over the butter and enjoy while warm.

Notes

  • If following a gluten free diet, please check the label of the baking powder to ensure there are no sources of gluten.
