Our Reuben-style Beef Lunch Box is an easy, flavourful way to enjoy classic deli flavours in a healthier way. A ‘Reuben’ is a classic American grilled sandwich, consisting of corned beef, Swiss cheese, sauerkraut and dressing, all between slices of rye bread. Famed for its savoury, rich flavour profile, it contains many elements that make it an excellent contender for a low-carb, high protein lunch. It just needs a few tweaks to make it Mediterranean-style diet friendly.
Corned beef, which the traditional sandwich is famed for, is a processed meat that is high in sugar and saturated fats. This is why our lunch box recipe opts instead for top-side cooked beef, or any leftover roast meat you may have. This way you’re still getting that rich, meaty flavour and texture, plus plenty of protein which helps this recipe reach a whopping 50g of protein per portion.
The other stars of the show in this recipe are the tangy pickles and sauerkraut. Both are highly beneficial for your gut health, like most fermented foods. They’re high in vitamin C, K1 and B6, as well as manganese and folate, thereby helping reduce inflammation, promote heart health and boost your immune system.1
It really doesn’t get more simple than this. Simply throw the ingredients together into a lunch box either the night before or while getting ready in the morning and pop it in the fridge until you’re ready to enjoy your delicious, easy meal, no heating required. Ingredients
- 100g cooked beef, topside roast, see Notes
- ½ baby cos lettuce 60g
- ¼ red onion, sliced 37.5g
- 30g sauerkraut, see Notes
- 30g pickles
- 45g Swiss cheese, sliced
- 1 slice rye bread 30g
- 1 tsp Dijon mustard
Instructions
- Add everything to a lunchbox and take it with you to work! Pop it in the fridge when you get there and you have an easy lunch, with no heating required.

Notes
- Use any cut of beef you prefer or have on hand. A great way to use up leftover roast meat.
- While Swiss cheese goes well in this recipe, any cheese will do! Use what you have on hand.
